Fillet/boning knife 17cm blade

This knife is the result of a beatiful mix between design, high and and eco friendly materials and cradftmanship.

It comes with an hand sanded 2mm thin high carbon stainless Sandvik 17C27N steel blade, with an ergonomic olive wood handle balanced to perfection with a solid brass bolster/guard.

The blade protection is made from a solid block of olive wood, holt with an hand sewn leather strap.

All wood is obtained via one of two sources: trees that died from fire, desease or from the pruning trimmings.
